Recipe: Dave’s White As Rice Burritos


  • 1 lb ground turkey (or beef)
  • 1/2 cup white rice
  • handful of cilantro
  • 2 scallions
  • 1 garlic clove
  • handful of baby spinach
  • ½ lemon
  • 6 ounces of American cheese
  • 4 large flour tortillas
  • Olive oil
  • Seasoning:
    • Black Pepper
    • Red Pepper
    • Sea Salt
    • Cayenne Pepper
    • Tapatío sauce


  • Large pan
  • Mixing bowl
  • Aluminum foil
  • Spatula or wooden spoon
  • Chopping board and knife



  1. Boil two cups of water. Once the water comes to a boil, place the rice into the pot, cover and simmer for 7 minutes.
  2. Heat up a large pan with a drizzle of olive oil. Brown the ground turkey.



  1. Wash and dry vegetables.
  2. Finely slice the scallions. Separate the white from the green.
  3. Mince the garlic.
  4. Roughly chop cilantro.
  5. Roughly chop baby spinach.
  6. Grate the cheese.



  1. Set the ground turkey to low. Season with black pepper, red pepper, sea salt, cayenne pepper, and Tapatío sauce to taste.  Add the scallion whites and garlic.  Squeeze 1/2 lemon’s worth of juice in as well.
  2. Wrap the flour tortillas with aluminum foil and put into oven. Set oven to preheat to 400 degrees.  When the oven is fully heated, the tortilla is perfect!



  1. Mix the cilantro, baby spinach, scallion greens, and a drizzle of olive oil in a bowl.
  2. Mix the rice with the ground turkey.
  3. Place the cheese on top of the turkey and rice. Mix together.
  4. Place cilantro, spinach, and scallion mix on top of the turkey, rice, and cheese. Mix together.



  1. Lay out warm tortillas. Place filling inside and wrap.
  2. Use any extra filling as a side.
